Matcha Berliner mit Erdbeer-Konfitüre

Matcha Berliner with strawberry jam

300ml milk
15g yeast
50g sugar
4g salt
2 eggs
60g butter
500g baking flour
8g matcha (4 scoops of pure matcha)
Strawberry Jam
powdered sugar

1. Dissolve yeast and sugar in milk.
2. Sift all dry ingredients and mix.
3. Place all ingredients except butter in a large bowl.
4. Knead well and add butter.
5. Knead for 10 minutes or until the dough is smooth.
6. Allow to ferment for 25 minutes.
7. Roll out to a thickness of approx. 2 cm and cut out.
8. Place on a tray and let ferment until it has doubled in size.
9. Fry both sides in hot oil until golden brown.
10. Let cool, fill with jam and decorate with powdered sugar.
